It amazes me how many people tell me that they make better choices about the foods they eat when they are on Plexus Slim.  It seems to be about everyone!  There seems to be a healthy domino effect happening here as well.  After I started feeling healthier, I wanted to do more for my health.  So, I started exercising again and little by little, I got better at it.  The silly thing is that over the past few years, I knew what I had to do.  I mean really, I went to school for Natural Health!  I just didn’t have the motivation to start all over again.  I needed a push and I am thankful that I was introduced to Plexus Slim!  So I am going to give you a recipe that my family absolutely loves!  It’s especially great this time of year!

I have taken a recipe from a vegetarian cook cook that I love and made exactly how we like it… thick and hearty.   This recipe has young children in mind so if you want to really amp it up, add a Chipotle Pepper in Adobo Sauce (chopped) when adding the Anaheim Peppers.  You could also add freshly sliced Jalapeno Peppers as a garnish.

Yummy Vegan Chili

  •  2 Tablespoons Olive or Coconut Oil
  • 1 Medium Onion, Diced
  • 1 Large Carrot, Peeled and Chopped
  • 1 Medium Green Pepper, Seeded and Chopped
  • 1 Medium Red Pepper, Seeded and Chopped
  • 1 Yellow Pepper, Seeded and Chopped
  • 4 Garlic Cloves, Minced
  • 3 Anaheim Peppers, Seeded and Chopped
  • 1 Tablespoon Dried Oregano
  • 1 ½ Tablespoon Chile Powder
  • 2 ½ teaspoons Ground Cumin
  • 1 ½ teaspoons Sea Salt
  • 1 can (28 ounce) Diced Tomato
  • 32 ounces Vegetable Broth
  • 1 can (15 ounces) Kidney Beans, Drained and Rinsed
  • 4 cans (15 ounces each) Black Beans, Drained and Rinsed

Heat the oil in a large pot over medium heat.  Saute the Onions, Carrot, Green and Red Peppers and the Garlic for 8-10 minutes until vegetables are softened but not browned.  Then add the Anaheim Peppers and sauté for an extra 2 minutes.

While sauteing, mix the Oregano, Chile Powder, Cumin and Salt together in a separate bowl.  Then add to Vegetables.  Stir them in really good.

Then add the Diced Tomatoes and stir again.  Then, add the Vegetable Broth, stir and gently simmer for over low heat, uncovered, 45 min.

While simmering, puree 2 ½ cans of the Black Beans.  This helps add thickness without the use of cornstarch.

After it has been simmering for 45 minutes, stir in the pureed black beans and then add the Kidney Beans and the remaining Black Beans.

Then let it simmer again, uncovered, for an additional 30 min.
